This coffee comes from small, dedicated farmers in Sumatra who are recognized for producing truly exceptional raw material. Most of these producers manage just two to four hectares of land, with about 1,000 coffee trees per hectare, handling everything themselves—from growing and harvesting to de-pulping right on the farm. After de-pulping, the coffee rests overnight to ferment, is washed the next day, and then lightly dried to remove surface moisture before being delivered to a local production facility. Across Sumatra, coffee is typically grown at elevations between 2,500 and 5,500 feet, and the vast majority of farmers work plots smaller than one hectare. Nearly all Sumatran coffee is processed using the traditional wet-hulling method, known as giling basah, which helps define its character.
