Finca Valentina has been in the Mejía family for four generations, tucked into the Montecillos region of Honduras at 1,600 meters. Producer Carlos Mejía Rodríguez named the farm after his eldest daughter, and his son Mario now handles day-to-day operations alongside their neighboring farm, Finca El Jardin. At around 25 hectares, it’s managed as a model farm with a real focus on ecological balance and long-term sustainability, not just for the coffee, but for the families working there. This coffee was sun-dried for just over 2 weeks and then rested in burlap sacks before prepping for export.
