This naturally processed coffee from the Chiapas region of Mexico is handpicked and sun dried on raised beds in a temperature controlled green house. The coffee goes through destoning after drying to ensure that no foreign matter makes it through. After hulling to remove the dried skin and parchment, the green coffee is color sorted and graded by size to keep the lot uniform visually and in quality.
Different than most naturals that taste more like fruit juice than coffee, this one from is full of rich sweetness and body.
Flavor notes: Ripe plum and dark chocolate while the coffee is hot, and it cools you get notes of graham cracker and burnt sugar.
Recommended brew method: French press at 198°C to bring out all the sweetness
