This is an Organic Grade 1 naturally processed coffee from the Kayon Mountain farm, owned by Esmael Hassen, located in the Guji zone of Ethiopia's Shakiso district. Coffee from single farms is rare in Ethiopia, most farms gather their beans at community washing stations. After the beans are harvested by hand, the coffee cherries are machine pulped and fermented for 36 hours. The beans are then dried on African beds for 12 to 20 days. This processing method help bring out any floral and fruit flavors in these Ethiopian Heirloom beans.
Flavor: Complex! Sweet, buttery texture with very pronounced clarity. Juicy strawberry, blackberry, blueberry, crisp citrus, and chocolate with hints of lavender and orange blossom.
