This microlot is 100% Caturra variety grown by Jairo Arcila, a third-generation coffee grower from Quindío, Colombia. Jairo’s first job was at Colombia’s second largest exporter, working as their Mill Manager for over 40 years until his retirement in 2019. Jairo bought his first coffee farm, Finca La Esmeralda, in 1987 and this is where he planted his first Caturra coffee trees. During the harvest period, Jairo provides needed jobs to the locals, generating a huge economic impact in the community.
This coffee is harvested following strict ripeness criteria, floated, and hand-sorted to remove any defects. Cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed clean of mucilage and then dried in temperature-controlled conditions until ideal moisture content was achieved.
Flavor Full-bodied and creamy. Black cherry, graham cracker, with a smooth milk chocolate finish.
