This is a blend of coffees sourced from small- to medium-sized family-owned farms from the Risaralda Department of Colombia. Risaralda is part of “The Coffee Triangle” along with Quindio and Caldas. “The Coffee Triangle” is the largest coffee producing area of Colombia and coffee from these areas is typically mild and sweet. This one is a blend of Caturra, Colombia, Typica, and Castillo varietals grown on farms about 2.5 hectares in size (about 6 acres). Most of Colombian producers today operate on farms less than 2 hectares or 5 acres.

Flavor
A traditional Colombian profile: fairly sweet with flavors of dark chocolate and caramel. You also get a nicely balanced cup with full-body, creamy texture, and a clean finish. There’s a subtle brightness coming through as orange zest plus notes of cherry and a hint of almond.

Coffee from Colombia is graded by size and not by defects with the two most common sizes being Supremo and Excelso. Supremo preparation means the coffee beans are sized on screens 17 to 18 (out of 20 with 20 being the largest) while Excelso preparation are beans that fall between screens 15 to 16.
